Mind Itch in your mouth…a truly wonderful thing. Even the thought makes my lips tremble and my tongue moisten…speaking of moistness (and I do enjoy speaking of moistness) here is a fine recipe passed from weed smoker to weed smoker across the world. It is the tastiest carrot cake known to man and has been known to bring people to their knees and weep with pleasure.
Preparation time: 1.5 - 2 hours
Difficulty: Medium (easy to make, but takes a while to perfect)
Utensils: Cake tin, big mixing bowl, wooden spoon, grater
Ingredients:
6 oz self raising flour
0.5 teaspoon (tsp) bi-carbonate of soda
0.5 tsp salt
0.25 tsp cinnamon
0.5 cup cooking oil
8 oz sugar
2 eggs
1.5 cups grated raw carrot
0.5 cup chopped nuts (I usually use brazil and walnut
but you can use anything - pecan are nice as well)
0.5 cup raisins
Method:
1. Add sugar gradually to the oil and beat well
2. Beat the eggs and then beat a little at a time into
the oil/sugar mixture
3. Add the dry ingredients and MIX WELL!
4. Add the carrots, nuts and raisins and again MIX
WELL!
5. Pour mixture into cake tin (I usually use 8 inch
springform tin) and bake at 325F (175C) for 60-65
minutes or until a skewer comes out clean from the
middle.
6. Enjoy!
If you want to add icing:
2 oz butter
3 oz icing sugar
Flavouring (I normally use almond essence but again
you can use whatever you like)
1. Cream the butter by squishing it in a dish with a
fork or spoon.
2. Add icing sugar and cream until smooth
3. Add 0.5 tsp flavour essence and spread on cake.
